berry nutty granola

I have read so many different recipes and wasn't happy with what they thought healthy was. I wanted a snack that not only would be great in flavor, but something I would go to for those snack craving times. I created my version of what I call a healthy granola. I know it seems like a ton of ingredients but you can save these for the next time you make them. It has satisfied my cravings, especially in the middle of the night! Well worth every bite, very nutty and so delicious!

Ingredients For berry nutty granola

  • 1 1/2 c
    old fashioned oats, uncooked
  • 1 c
    chunky peanut butter
  • 3/4 c
    agave syrup
  • 1/4 c
    chopped almonds
  • 1/4 c
    sunflower seeds
  • 1/4 c
    shredded coconut
  • 1/4 c
    chia seeds
  • 1/4 c
    ground flax seeds
  • 1/4 c
    coconut flour
  • 2 tsp
    cinnamon
  • 2 tsp
    vanilla extract
  • 1/2 c
    dried cranberries
  • 1/2 c
    raisins
  • 1 Tbsp
    coconut oil (for coating your baking sheet)

How To Make berry nutty granola

    Measure all your ingredients and have them ready.

    Add the peanut butter and 1/4 cup of the Agave in your foor processor, blend until it's completely combined and set aside

    In a large bowl or kitchen aid mixer, combine the oats, Flax seed, coconut flour, chia seeds, almonds and cinnamon . Mix it all up.

    Put the peanut butter mixture into the rolled oats bowl. Add the vanilla now , begin to mix the ingredients altogether (If using the kitchen aid attach the paddle attachment and mix on lowest speed). This will take a bit to incorporate the oats into the PB mixture. You want the oats to be completely incorporated .

    Go ahead and add the rest of the Agave to help soak more of the oats and bind it all together and continue to mix. Add your raisins and dried cranberries, coconut and sunflower seeds.

    Coat your cookie sheet (standard with sides) with coconut oil then spread evenly. Press down firmly

    Bake at 250 degrees for 30 minutes.

    You can crumble this up for granola crumbles to add to your ice cream, cereal or oatmeal. Or, you can cut into bars. If doing this allow them to completely cool before removing from your pan (Cut the desired squares while hot) The photo here shows the crumble layers with fresh berries and Greek Yogurt and a bar placed on the side. Next time I will add it to one of my healthy smoothies :)
