This is from my ice cream maker recipe booklet, but I added the Ghirardelli dark and mint chocolate square candies to the ice cream. Then I swirled some hot fudge chocolate sauce through when I put it into the pan that goes into the freezer. Andes candies are a good substitute for the chocolate squares.

This rich and creamy chocolate ice cream with chocolate mint candy is proof and egg-free ice cream can be creamy. The base is filled with chocolate flavor. Then, it has bits of chocolate mint candies peppered throughout. The combination of chocolate and mint is just right. Ribbons of chocolate fudge make this homemade ice cream a chocolate lover's dream.

Ingredients For homemade chocolate ice cream with chocolate mint candy

  • 3/4 c
    cocoa powder, sifted
  • 1/2 c
    granulated sugar
  • 1/3 c
    brown sugar, packed
  • 1 pinch
    salt
  • 1 c
    whole milk
  • 2 c
    heavy cream
  • 1/2 Tbsp
    pure vanilla extract
  • 7 md
    squares chocolate mint candy squares
  • 5 Tbsp
    hot fudge sauce

We used Ghirardelli dark chocolate mint squares for testing. If they are not available, Andes candies are a good substitute. However, since they are smaller, you'll need about 14 candies.
  • Whisk cocoa, granulated sugar, brown sugar, and salt.

    Whisk the cocoa, granulated sugar, brown sugar, and salt in a medium bowl.
  • Add milk and beat.

    Using a hand mixer, add the milk and, on low speed, beat to combine until cocoa, sugars, and salt are dissolved.
  • Stir in heavy cream and vanilla extract.

  • Cover and refridgerate.

    Cover and refrigerate for a minimum of 1 hour.
  • Churn the chocolate mixture for 15 minutes.

    Prepare the ice cream machine according to manufacturer directions. Pour in the chocolate mixture and churn for 15 minutes.
  • Cut the mint candies into smaller pieces.

    Cut each chocolate mint candy into 9 cubes each.
  • Add chocolate candies and continue to churn.

    Add chocolate mint candy and continue to churn for another 45 minutes.
  • Pour into a pan and add hot fudge sauce in layers.

  • Freeze for 6-8 hours.
