sweet essentials: cup of blueberries

I had a container of blueberries that needed attending to, so I did this with them. I wanted it to be as simple as possible, and come in single servings. It is moist enough to serve on its own, or you could serve with a bit of ice cream, or maybe a teaspoon or two of Devonshire cream. So, you ready… Let’s get into the kitchen.

Ingredients For sweet essentials: cup of blueberries

  • PLAN/PURCHASE
  • 2 Tbsp
    sweet butter, unsalted, melted
  • 2 1/2 Tbsp
    coconut sugar
  • 2 Tbsp
    half & half
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    lemon juice, freshly squeezed
  • 1/4 c
    flour, all-purpose variety
  • blueberries, a handful
  • OPTIONAL ITEMS
  • a dollop of vanilla ice cream
  • a drizzle of warm cream

    Coconut sugar will slightly change the flavor base of this recipe. If you do not wish to be experimental, just use regular white, granulated sugar.

    The ovenproof serving cups that I am using hold about 1/4 of the batter. That will fill them up to a bit over halfway. Understand that when these are baked, they will double in volume. So, filling them up a bit over halfway is perfect. If you are using cups similar to mine, this recipe will yield three to four servings.

    Gather your Ingredients (mise en place).

    Place a rack in the middle position, and preheat the oven to 375f (190c).

    In a small bowl, whisk the sugar, melted butter, vanilla, lemon juice, and half and half together.

    Add the flour and baking powder, and mix until combined.

    Throw in a handful of blueberries and fold into the batter. Then add to the ovenproof cups, and throw a few more berries on the top… why not.

    Stick into the preheated oven until they puff up, and brown, about 20 – 22 minutes.

    Let rest for about 5 minutes, and then serve while nice and warm. Add a small dollop of ice cream on top, or maybe a drizzle of Devonshire cream. Enjoy.
