In Chicago its a little harder to get good fresh peaches, but when i can i use them ,otherwise i use can peaches which works very well too.

  • 1/4 c
  • 1/4 c
    brown sugar
  • 1/4 tsp
    cinnamon, ground
  • 1/8 tsp
    nutmeg, ground
  • 1 tsp
    lemon juice, fresh
  • 2 tsp
  • 1 c
    all purpose flour
  • 1/4 c
  • 1/4 c
    brown sugar
  • 1 tsp
    baking powder
  • 1/2 tsp
  • 6 Tbsp
    unsalted butter, chiled , cut into small pieces
  • 1/4 c
    water, boiling
  • 8
    fresh peaches peeled pitted cut thin wedges
  • ·
    can peaches optional ( i use this)



  1. mix together 3 tablespoons sugar and 1 teaspoon ground cinnamon
  2. preheat oven to 425 f
  3. in a large bowel , combine peaches, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 teaspoon cinamon, 1/8 teaspoon nutmeg , 1 teaspoon lemon juice, and 2 teaspoons cornstarch. toss to coat evenly. pour into a 2 quart baking dish, bake in preheated oven for 10 minutes
  4. meanwhile, in a large bowel combine 1 cup flour, 1/4 cup sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt. blend in butter with your fingers until mixture is like course meal. stir in water until just combined.
  5. remove peaches from oven and drop spoonfuls of topping over them. spinkle entire cobbler with sugar cinnamon mixture.
  6. bake until topping is golden brown, about 30 minutes.
