Something with fresh citrus just seemed appropriate for Easter. Thus, several lemons later this luscious loaf popped out of the oven like an Easter chick out of an egg! This is made with all fresh lemon juice and the lemon pudding mix and Greek yogurt lend moistness to this loaf. My neighbors tell me this reminds them of Starbuck's Lemon Loaf. As I have never tried their lemon loaf, I cannot say. I can say, however, that you will enjoy this loaf if you love the tanginess of lemon.

Ingredients For luscious lots of lemon loaf

  • 3
    eggs
  • 1 c
    sugar
  • 1 c
    greek yogurt
  • 1/2 c
    vegetable oil
  • 1/3 c
    freshly squeezed lemon juice
  • 2 Tbsp
    lemon zest, grated
  • 1 1/2 c
    all purpose flour
  • 1 box
    small box lemon pudding
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    confectioners' sugar
  • 4 Tbsp
    freshly squeezed lemon juice
  • 2 Tbsp
    whole milk

How To Make luscious lots of lemon loaf

    Preheat oven to 350 degrees and lightly grease a 9X5 inch loaf pan with non-stick spray.

    In a large mixer bowl, beat eggs and sugar together. Now mix in Greek yogurt and vegetable oil.

    Whisk in lemon juice and lemon zest.

    In a medium bowl, toss together flour, dry lemon mix, baking powder, and salt.

    Add dry ingredients to wet ingredients until just incorporated. Do not over mix.

    Pour batter into prepared loaf pan and smooth out top. Bake for 45-50 minutes or until tester inserted in center comes out mostly clean. This is a moist loaf and you do not want to over bake.

    If necessary, cover loaf with aluminum foil during the last 5-10 minutes to prevent browning.

    While loaf is baking, whisk together 2 cups confectioner's sugar, 4 tablespoons lemon juice, and 1 tablespoon milk to create glaze. Add more juice or milk to achieve desired thickness and taste.

    Once loaf has cooled, remove from loaf pan and add glaze to top. Let glaze set before slicing. Serve at room temperature or store, refrigerated, in an air tight container. Enjoy that luscious lots of lemon goodness!
