I created this recipe for our Church Thanksgiving dinner. I wanted to take something different as they're always wondering what I'm going to be bringing. LOL! I think they'll be pleased as my family sure was. I hope you'll try it sometime. It's especially good with ice cream. Just scrumptious!

Ingredients For ~ luscious cranberry cobbler ~ cassies

  • 2 - 12 oz
    packages - fresh cranberries, frozen or thawed
  • 1 1/2 c
    sugar - this is what i used, can cut it some if you prefer
  • 1/3 c
    flour
  • 1/8 - 1/4 c
    orange juice
  • TOPPING
  • 4 Tbsp
    sugar
  • 1 3/4 c
    flour
  • 1 1/2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1/4 c
    crisco
  • 1/2 c
    each - buttermilk & heavy cream
  • 2 Tbsp
    melted butter
  • sprinkles
    of sugar
  • 14 - 1/2 c
    chopped walnuts or pecans - optional

How To Make ~ luscious cranberry cobbler ~ cassies

    Preheat oven to 425 degree F. In a food processor, add flour, sugar, baking powder and salt. Pulse a couple times to blend. To this add shortening a pulse a couple more times. Next, add the milks and pulse until resembles a thick batter, 4 - 5 times. Set aside. ( This can be done with a pastry blender as well. Just mix dry ingredients and cut in the shortening. Then stir in the milks.)

    For the filling: In a large bowl, whisk together the 1 1/2 cups sugar and 1/3 cup flour. Toss this mixture with the berries. Sprinkle with orange juice.

    Grease a 3 quart casserole dish and ( I use my hands ) to place berries evenly into dish. Sprinkle the sugar and flour mixture, remaining in bowl evenly over berries.

    Now, add heaping dollops of batter evenly over the top of berries. I flatten them out a bit with my fingers. You want even amounts of the batter over the berries.

    Melt the 2 tablespoons of butter and brush the top of the batter, then sprinkle the batter with desired sugar. Place in oven and bake until topping is golden and berries are bubbly and thickened. ( about 35 minutes of berries are frozen, 30 minutes if thawed are used.

    Remove from oven and I sprinkled evenly with chopped walnuts. ( Optional ) I then let it set up and cool for 30 minutes. Can serve with Ice cream or whipped cream.
