As I try to remember to teach my grandbabies more recipes, one wants to learn how to make sweet dreamy coconut bars. Love you Grandme. So memories just keep growing.

Maria's Grandme's bars are quite dreamy! They have a shortbread-like base and a soft, chewy center. You taste flakes of coconut and chocolate chunks in every bite. The brown sugar mixed in creates a unique topping that's light and crunchy. They're simple to make and scrumptious.

Ingredients For grandme's sweet dreamy bars

  • 1-1/2 c
    all-purpose flour
  • 2 c
    brown sugar, divided
  • 1/2 c
    real butter at room temperature
  • 3 lg
    eggs
  • 1 tsp
    baking powder
  • 1 tsp
    pure vanilla extract
  • 1/4 tsp
    salt
  • 1-1/2 c
    flaky coconut
  • 1 c
    chocolate morsels (or dark chocolate chunks)

How To Make grandme's sweet dreamy bars

    Preheat oven to 350 degrees.
  • Flour, brown sugar, and butter in a bowl.

    Combine flour, 1/2 c brown sugar, and butter. Use the low speed of mixer, mix until particles are fine.
  • Pressing mixture into a baking dish.

    Press mixture into bottom of ungreased 13x9 inch pan. Bake at 350 for only 13 to 15 minutes.
  • Mixing brown sugar, eggs, and other ingredients.

    Mix the rest of your ingredients, while crust is being cooked. Beat 1-1/2 cups of brown sugar with eggs just until blended. Mix in the remaining ingredients (except the chocolate chips/chunks).
  • Sprinkling chocolate chunks over batter.

    Spread batter over partially baked crust. Toss chocolate chips/chunks over it.
  • Bars out of the oven after baking.

    Bake 20 minutes to 25 minutes, or until golden brown. Cool and cut with sharp knife.

    You can also use different candy toppings like crushed candy canes or chocolate mints. We did one with green crystals topping. All of them were very good.
