Yummy peaches, poached in wine and coconut sugar, topped with some homemade French vanilla ice cream, and dusted with a bit of Vietnamese cinnamon.

1/2 cwhite wine
2/3 ccoconut sugar
1vanilla bean, slice in half lengthwise
4 mediumripe, firm peaches
·french vanilla ice cream
·cinnamon, for dusting
