This recipe came from Good Life Eats, healthier for you if made with the oat and barley flours, or you can use 2 1/2 cups regular flour.
Great time of year for these, perfect Holiday gift too!

Ingredients

  • 1 c
    whole wheat pastry flour, you can use a total of 2 1/2 cups if you don't have oat and barley flour
  • 3/4 c
    oat flour
  • 3/4 c
    barley flour
  • 1/2 c
    oats
  • 1 stick
    butter, soften
  • 1/3 c
    olive oil plus 2 tablespoons
  • 1/2 c
    unrefined sugar
  • 1 tsp
    cinnamon, more if you like
  • 1 tsp
    vanilla extract
  • 1 tsp
    baking powder
  • FILLING:

  • 3-4 c
    fresh cranberries (never tried it with dried)
  • 1/2 c
    sugar, unrefined, could actually do 1/4 cup but you may want it sweeter
  • 3 Tbsp
    orange juice
  • 1 Tbsp
    corn starch

How to Make Cranberry Crumble Bars Made Healthy

Step-by-Step

  1. Preheat the oven 375 degrees F
    Butter and flour a 8.5x8.5 inch square pan (this is what I used but you can use any other larger size you may have)
  2. In a bowl mix together sugar, oats, flours, cinnamon and baking powder.
    Add the butter, vanilla and oil and mix until the texture resembles coarse breadcrumbs.
    Dough will come together just like the picture.
  3. Pat half the dough into the prepared pan. Place reserved half aside. Sprinkle the cranberry mixture evenly over the dough in pan, then the rest of the dough on top.
  4. Bake for 45-50 minutes, or until top is a light golden brown. Cool completely on wire rack then transfer to the refrigerator to chill before cutting into squares. Store in an airtight container in the refrigerator to chill before cutting into squares.
