Almost 30 years ago, my nephew and niece went to the First Presbyterian Child Care Center in Bryan, TX...or, as my sweet little nephew Jason said, "First Presabubbaterian". The mommy's of the kids put together a little cookbook. There isn't a name on this recipe, but whoever contributed it, THANK YOU! These are one of my favorite treats, especially during the holidays!

Ingredients For cranberry bars

  • FILLING
  • 3/4 c
    sugar
  • 1/2 c
    water
  • 2 c
    fresh cranberries
  • 1/4 c
    orange juice
  • 1 Tbsp
    grated orange peel
  • 1 Tbsp
    butter
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 1 c
    walnuts, chopped
  • DOUGH
  • 2 c
    all purpose flour
  • 1 tsp
    salt
  • 1 1/2 c
    sugar
  • 1 1/4 c
    butter, softened
  • 3 c
    uncooked oatmeal

How To Make cranberry bars

    To make filling: Combine sugar and water in saucepan and bring to a boil.

    Add cranberries and cook until cranberries pop, about 5 minutes.

    Add orange juice, peel, butter, cinnamon and salt. Cook until mixture thickens, about 5 more minutes.

    Remove from heat and stir in walnuts. Set aside to cool.

    To make dough: Sift flour, salt and sugar. Cut in butter.

    Add oatmeal and mix thoroughly.

    Pat half the oatmeal dough in an ungreased 13 x 9 x 2 pan, patting dough down firmly and evenly.

    Spread filling on top.

    Pat remaining oatmeal dough over the filling.

    Bake in a preheated 425 degree oven for 25-30 minutes or until lightly browned.

    Cool and cut into bars.
