My grandchildren helped me come up with this easy and fun recipe! It is a New spin on an Old recipe! I use dark brown sugar (sometimes I add molasses for stronger old fashioned flavor), but you can use light brown sugar as well. We love using Rodelle Vanilla products, so I mentioned them in the recipe. Enjoy yourself in the kitchen... Play With Your Food! ox

Ingredients For apple ring crisp

  • OATMEAL MIXTURE
  • 4 c
    oatmeal
  • 1 1/2 c
    all purpose flour
  • 2 1/2 c
    dark brown sugar
  • 1 stick
    butter or margarine, room temperature
  • APPLES
  • 5 - 8 lg
    apples, any kind you like
  • BUTTER OR MARGARINE
  • 1 stick
    butter for putting on oatmeal layers
  • OPTIONAL TOPPINGS:
  • ice cream, whipped cream
  • rodelle cinnamon sugar

How To Make apple ring crisp

    Mix together all the Oatmeal Mixture ingredients (I like using my hands rather than a spoon).

    Wash and dry apples. Slice about 1/2 inch thick (as you like, slices don't need to be perfect). *** I don't peel the apples, you can if you want to. *** I use a cannoli tube to remove center cores (a metal cookie or biscuit cutter works too).

    Put about half of the Oatmeal Mixture on the bottom of a large jelly roll pan (12 x 20) Dot the top of Oatmeal layer with butter. Place apple slices on top of the oatmeal layer. *** If you don't have the large pan, use two smaller pans.
  • Oatmeal layer, apple slice layer, sprinkled with cinnamon

    Sprinkle the apples with Rodelle Cinnamon Sugar.

    Put pecans in center of each apple ring.
  • Over the apple pecan layer is a layer of oatmeal mixture dotted with butter.

    Cover apple ring layer with another layer of the Oatmeal Mixture. Dot the top with Butter. Bake at 350 degree oven for about 20 minutes (until apples are tender and topping is crisp).

    Serve warm or cold. Top with ice cream or whipped cream. Sprinkle Rodelle Cinnamon Sugar or Vanilla Sugar on top of ice cream or whipped cream.
