I asked my aunt what to do with leftover apples and this is what she told me. :)

Blue Ribbon Recipe

Now, this is an easy to make fall dessert. The only bad thing we have to say is the recipe needs to be doubled! We tasted a few spoonfuls and loved the cinnamon apple filling. It's thick and syrupy and the apples are soft and juicy. The crunchy topping is sweet with almost a molasses taste (thanks to the brown sugar). Next thing we knew, 3/4 of this dish was gone. This is a treat!
