Ingredients For queen mary tartlets

  • 1 c
    all purpose flour
  • 1 pinch
    salt
  • 1/3 c
    butter
  • 1 tsp
    caster sugar (superfine sugar)
  • 1
    egg yolk
  • FOR THE FILLING:
  • 1/4 c
    caster sugar
  • 1/4 c
    butter
  • 1
    egg
  • 3 Tbsp
    chopped mixed candied peel
  • 2/3 c
    sultanas (golden raisins)

How To Make queen mary tartlets

    Combine the flour and salt in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar.

    Mix the egg yolk with 2 Tbsp. cold water and add to the mixture, then knead to a dough. Roll out thinly on a lightly floured board, cut into 12 rounds with a cookie cutter and place in a muffin tin.

    For the filling: cream together the sugar and butter; then beat in the egg. Add the mixed peel and sultanas. Divide the mixture between the tart shells.

    Bake in a preheated 375-degree oven for 30-35 minutes or until golden and set.
