My good friend and co-worker, Colleen, used to bring this pie to our company potlucks. It disappeared like new fallen snow every time, and sometimes caused a scuffle or two... it is that good!! Before she retired, she shared the recipe with a few of us. My husband can eat the whole thing in 1 night! On top of that, it is easier than most of the coconut custard pie recipes, so it is a win/win!!

This coconut custard pie recipe proves anyone can bake a pie. Simply mix the ingredients, pour it into a pie shell, and when it bakes it makes its own custard. The custard has a vanilla coconut flavor with a fluffy, creamy center. On top is crunchy flaked coconut. It's an easy homemade pie filled with traditional coconut custard pie flavors. You can't go wrong with this old-fashioned pie for a holiday dessert table.

  • 2 c
    half and half
  • 1 Tbsp
    corn starch
  • 3 lg

  • 1/2 c

  • 1/2 stick
    butter, melted
  • 1 pinch
    sea salt
  • 1 tsp
    vanilla extract
  • 1 1/4 c
    coconut, flaked or shredded
  • 9 inch
    deep dish pie crust

  • Mix eggs and sugar well with a hand mixer.
