These quick and easy pumpkin cheesecake bars are going to be a hit with family and friends. If someone says they don't like pumpkin, we think they'd still like this dessert. The crust has a savory butter taste. It's gooey, yet crunchy at the same time. Cream cheese and sugar make the filling sweet and creamy. The pumpkin flavor is subtle and delightful. They're divine! Ingredients

  • CRUST:

  • 2 c
    all-purpose flour
  • 1/2 c
    firmly packed brown sugar
  • 1 c
    butter, softened
  • CHEESECAKE FILLING:

  • 3 pkg
    cream cheese, softened, 8 oz. each
  • 1 c
    pure pumpkin
  • 3/4 c
    sugar
  • 3 large
    eggs
  • 1 tsp
    vanilla extract
  • 1 tsp
    pumpkin pie spice

How to Make Pumpkin Cheesecake Bars

Step-by-Step

  1. Preheat oven to 350 degrees F. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry blender (or 2 forks) until the mixture is crumbly.
  2. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil.
  3. Bake 15 minutes or until lightly browned.
  4. In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth.
  5. Add pumpkin and then add eggs, 1 at a time, and vanilla and pumpkin spice.
  6. Stir to combine.
  7. Pour over warm crust.
  8. Bake for 40-45 minutes, or until filling is set.
  9. Cool.
  10. Once cooled down cut into squares. Serve with whipped cream.
