I love coconut and dark chocolate together, as do several of my friends. I created this recipe for a well-traveled friend, and he thought they tasted right out of a bakery in Europe. Brought back memories for him.

Chocolate and coconut are always a wonderful flavor combination, and these bars prove that. The bottom has a chocolaty fudge taste with a cookie-like texture. On top is a creamy filling with a strong coconut flavor. We tried them warm and after they had chilled. They were really good both ways, but we think we liked them chilled even better.

Ingredients For black bottomed coconut dream bars

  • CRUST:
  • 1 c
    all-purpose flour
  • 1/2 c
    cocoa powder
  • 1/2 c
    dark brown sugar
  • 1/2 c
    granulated sugar
  • 1 c
    cold butter, cut up
  • 1/2 c
    sour cream
  • 1/8 tsp
    salt
  • COCONUT LAYER
  • 1 c
    heavy whipping cream
  • 1 c
    milk
  • 2 tsp
    pure vanilla extract
  • 3 lg
    eggs
  • 1 1/2 c
    flaked sweetened cooconut
  • 4 Tbsp
    butter, cold, cut up
  • 3 Tbsp
    all-purpose flour
  • 1/2 c
    granulated sugar

How To Make black bottomed coconut dream bars

  • 1
    Pre-heat oven to 350 degrees F. Line a 9x13 inch baking pan with parchment paper, making sure paper sticks out over the edges about an inch.
  • Flour, cocoa powder, salt, butter, and sugars for the crust mixed together.

    Using a 12 cup food processor, or a pastry blender, blend together flour, cocoa powder, salt, butter, and sugars for the crust until the mixture resembles coarse crumbs and begins to stick together.
  • Sour cream mixed into ingredients.

    Stir in sour cream until the mixture is moist and smooth.
  • Mixture spread into a baking pan.

    Spread mixture evenly into parchment-lined baking pan. Press mixture into corners.
  • Filling ingredients in a food processor.

    In a 12 cup food processor or blender, combine ingredients for filling.
  • Filling ingredients mixed until smooth.

    Blend 30-60 seconds or until well combined.
  • Pouring filling over chocolate crust.

    Pour coconut mixture over crust in baking pan.
  • Coconut bars baking in the oven.

    Bake at 350 degrees for 45-60 minutes or until done in the center (knife comes out clean when inserted in center).
  • Baked coconut bars cooling.

    Cool 5-10 minutes before cutting. Serve warm or chill before serving. Store uneaten bars covered in the refrigerator. These just get better with time – if possible – chill overnight before serving!
