This is my spin on pumpkin cookies and a family favorite, not just at holiday time! These very soft cookies have a wonderful flavor with the perfect amount of spice. The fruit (raisins or Craisins) add a little additional sweetness and chewiness while the nuts are crunchy. You have it all in this cookie! This recipe makes a lot of cookies and they could easily be glazed though my family thinks they are perfect the way they are. Place a walnut half on each cookie before baking if you like, or leave nuts out altogether. Enjoy!

If you like fall flavors with pumpkin spice, this is a fabulous cookie. We used the optional dried cranberries and walnuts and suggest doing the same. It gave the cookie a bit of texture while adding a nutty, sweet flavor. Once baked, the cookie is more cake-like than a typical oatmeal cookie. So, if you like that type of cookie this fall treat is for you.

Ingredients For pumpkin oat cookies

  • 2 c
    all-purpose flour
  • 1 1/3 c
    quick or old-fashioned oats
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 tsp
    pumpkin pie spice
  • 1 tsp
    cinnamon
  • 1/2 c
    butter, softened
  • 1/2 c
    applesauce, unsweetened
  • 1 c
    brown sugar
  • 1 c
    sugar
  • 1 c
    pumpkin, canned
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    dried cranberries, sweetened (ie. Craisins) or raisins
  • 1 c
    walnuts, chopped (optional)

Keep an eye on your cookies... in our oven, they baked for about 12 minutes.
  • Flour, oats, baking soda, salt, and spices in a bowl.

    Preheat oven to 350 degrees. Combine flour, oats, baking soda, salt, and spices in a bowl. Set aside.
  • Butter, applesauce, brown sugar, and sugar combined in a bowl.

    Beat together butter, applesauce, brown sugar, and sugar in another bowl until light and fluffy.
  • Pumpkin, vanilla extract, and egg added to butter mixture.

    Add pumpkin, vanilla extract, and egg. Mix well.
  • Wet and dry ingredients combined.

    Add flour mixture and mix together.
  • Folding in dried cranberries and nuts.

    Add cranberries (or raisins) and nuts (if using). Mix.
  • Cookie batter scooped onto a baking sheet.

    Drop tablespoons of dough onto a greased cookie sheet, or use parchment paper.
