  • DRY INGREDIENTS
  • 2 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • WET INGREDIENTS
  • 1 c
    coconut oil
  • 3/4 c
    white sugar
  • 3/4 c
    dark brown sugar
  • 2
    eggs
  • 2 tsp
    vanilla extract
  • 1 pkg
    instant strawberry pudding mix
  • ADDITIONALS:
  • 1 1/2 c
    shredded coconut
  • 1 c
    white chocolate chips
  • 1 c
    semi-sweet chocolate chips
  • 20 oz
    crushed pineapple
  • 1
    mango

How To Make it's five o' clock somewhere cookies

    Dump pineapple into large sieve to drain away juices. Leave in sieve at least 20 minutes, stirring occasionally to release trapped moisture.

    Dice mango and set aside on paper towel, to draw out some of the moisture.

    Toast 1 cup of the coconut in a pan over low-medium heat, until coconut is lightly browned. Set aside to cool. Reserve rest of untoasted coconut.

    Preheat oven to 350.

    Sift together flour, baking soda and salt in a large bowl. Set aside.

    In separate bowl, beat together coconut oil, sugars and eggs. Add vanilla and pudding mix. Mix well.

    Fold wet bowl into flour bowl. Add the chocolate chips, toasted coconut, and 3/4 of the pineapple. Fold gently until all incorporated together.

    On top of the cookie balls, press down a pinch of raw coconut, pinch of pineapple and pinch of mango.

    Roll tablespoon-full amounts in your hand and place on greased cookie sheet / pan.

    Bake for 8-10 minutes.
