I had a hard time finding the cherry flavored chips, than I discovered Log House online store. While Walmart carries them from time to time, they only have them as a seasonal item. I made these for Hopes Table and everyone who tried them loved them! Yummy!

Ingredients For cherry cordial cookies

  • 1 c
    butter, unsalted, at room tempature
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 2 tsp
    vanilla extract
  • 2 & 3/4 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 bag
    10 oz bag of cherry flavored chips
  • CHOCOLATE GANACHE DRIZZLE
  • 1/2 c
    sweetened condensed milk
  • 1 c
    semi-sweet chocolate chips
  • 1 tsp
    vanilla extract
  • 1
    disposible pastry bag or zip lock freezer bag

How To Make cherry cordial cookies

    Preheat oven to 350, line baking sheet pans with parchment paper. Now sift together flour, baking soda and salt then set aside.

    In mixing bowl combine butter and sugar, than beat till well blended. Add eggs and vanilla extract and beat till light and fluffy. Add flour mixture and stir till well blended. Now add cherry chips and fold into the dough.

    Drop spoons of dough onto baking sheet at least 3 inches apart. I use a 1" cookie scoop for nice uniform sized cookies. Bake for 10 to 12 minutes or till lightly browned, being careful not to over cook. When done allow to rest on cookie sheet for 5 minutes than transfer to a cooling rack.

    While you are finishing baking your cookies make the ganache. In small sauce pan combine chocolate chips and sweetened condensed milk. Heat over low heat stirring frequently till all the chocolate chips are melted and well blended with the sweetened condensed milk. Stir till smooth and satiny, than stir in vanilla and set aside till cookies are done. You want the ganache to be warm but not hot when you drizzle it on your cookies.

    Once you have finished baking and cooling the cookies, pour all the ganache into pastry bag or zip lock freezer bag. Cut corner of the bag or the tip of the pastry bag and squeeze in a zigzag motion onto the tops of your cookies. You can put your cookies into the fridge for 10 minutes to set up the ganache if you like. Now serve and enjoy! Store in airtight container up to 3 days at room temp or in fridge for longer periods of time.
