My dad is a huge cookie fan and he wanted me to create a cookie that was reminiscent of one of his favorite holiday treats - Cherry Cordials. This is what I came up with. It has turned out to be a VERY popular cookie with family and friends.

You need these soft sugar cookies on your holiday cookie tray. They have little bits of dried cherries, are topped with a dollop of chocolaty cherry preserves and drizzled with white chocolate. Oh my... they're good. Chewy, chocolaty, sweet, and fantastic.

Ingredients For cherry cordial cookies

  • 1/2 c
    butter, room temperature
  • 1 c
    sugar
  • 1 1/2 tsp
    pure vanilla extract
  • 2 c
    all-purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 3/4 c
    chopped dried cherries
  • 1 c
    cherry preserves
  • 1 c
    semi-sweet chocolate chips
  • 1/2 c
    vanilla or white chocolate chips

How To Make cherry cordial cookies

  • 1
    Pre-heat oven to 350° F.
  • Creaming butter and sugar in a bowl.

    Cream together butter and sugar.
  • Blending eggs and vanilla into butter/sugar.

    Blend in egg and vanilla.
  • Flour and dry ingredients mixed together.

    Sift together flour, baking powder, and salt.
  • Dry ingredients and cherries added to butter.

    Add to butter mixture along with dried cherries, just until blended.
  • Dough spooned onto a baking sheet.

    Scoop rounded teaspoonsful of dough onto a parchment-lined baking sheet.
  • Cookies baked until light golden brown.

    Bake at 350° F. for 10-12 minutes or until lightly golden.
  • Cherry preserves heated in a clear bowl.

    While cookies are baking, melt cherry preserves. In a microwave-safe bowl, heat cherry preserves on high for one minute in the microwave.
  • Breaking up the cherries in the preserves.

    Using an immersion blender blend the preserves to break up the cherries. Or use a small chopper or fork to mash them.
  • Stirring chocolate chips into preserves.

    Stir semi-sweet chocolate chips into the hot cherry preserves. Continue to stir until chocolate chips are melted and the mixture is smooth.
  • Creating an indentation in the cookie.

    Remove cookies from the oven. Using the back of a spoon, immediately form a shallow well on the top of each cookie. Transfer cookies to a rack to cool.
  • Spooning chocolate cherry preserves onto cookie.

    Spoon chocolate cherry mixture into the wells on top of each cookie.
  • Melting white chocolate chips in a double boiler.

    Melt white chocolate chips in a double boiler or in a stainless steel bowl set over boiling water.
  • Drizzling white chocolate over cookies.

    Drizzle white chocolate over filled cookies. Allow to cool completely.
