  • 1 stick
    sweet butter, unsalted
  • 1 box
    white cake mix [no pudding in the mix]
  • 1 Tbsp
    baking powder
  • 1 c
    cake flour
  • 1/8 tsp
    salt
  • 1/4 c
    sugar, white
  • 1 can
    (10 oz) can frozen margarita mix, thawed [undiluted]
  • 3 lg
    egg whites
  • 1 tsp
    pure vanilla extract
  • 3 Tbsp
    vegetable oil
  • 1 Tbsp
    grated lime zest
  • 1/4 c
    water
  • 3 Tbsp
    tequila
  • TEQUILA MIXTURE
  • 1/4 c
    powder sugar
  • 2 Tbsp
    key lime juice
  • 2 Tbsp
    tequila
  • ICING
  • 1 stick
    sweet butter, unsalted, softened
  • 8 oz
    1 package cream cheese, softened
  • 1 Tbsp
    lemon juice
  • 2 Tbsp
    key lime juice
  • 1 tsp
    key lime zest or 1 tsp lemon zest
  • 4-5 c
    confectioners' sugar
  • 3 Tbsp
    tequila
  • 1 tsp
    electric green gel food color
  • DECORATION
  • 1/4 c
    coarse white sugar or shite decorator sugar crystals
  • 24 slice
    thin lime slices [about 3 whole limes]

How To Make margarita cupcakes for the holidays

    In large bowl, first place butter in empty bowl. Add cake mix, baking flour, baking powder, salt, sugar. Stir lightly until incorporated. No more than 1-2 minutes. Add {entire can} of Margarita mix, egg whites and vegetable oil, water, vanilla using electric mixer.

    Stir in Tequila and lime zest; mix completely

    Fill prepared pans 2/3 full.

    Bake according to box directions (350 degrees - be sure to check box!) Bake 22-24 minutes or until toothpick inserted in center of cupcake comes out clean.

    Cool in pan on cooling rack 8-10 minutes

    Tequila Mix. In a small bowl, mix together 2-4 tbsp of tequila. lime juice and powder sugar until smooth. Mixture should be thinly in density.

    Brush tops of cupcakes lightly with tequila mix.

    Cool completely. Remove cupcakes from pan.

    FOR ICING: In a medium bowl, cream butter, cream cheese, lime juice and zest with electric mixer until light and fluffy.

    Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy. If icing is too thin add additional confectioners' sugar 1 tablespoon at a time. Add food color until blended.

    Add tequila. 1 tblsp at a time.

    Frost cupcakes. Sprinkle sugar on small plate; roll edges of cupcakes in sugar. Cut small slit in lime slices; twist and place on cupcakes

    Garnish, if desired, with lime zest, an additional sprinkling of salt and a lime wedge.

    Poke 1 umbrella into each cupcake. Store loosely covered in refrigerator.

    Of course, use Tequila responsibly. It's your preference on the amounts of Tequila to use, so measure accordingly.
