We moved into our motorhome full time just before the holidays, and we had very little money left to make any special treats. Plus we couldn't get the RV oven to light, but I remembered this great and simple way to make a nice little treat. It's amazing how tender and tasty this cake turns out with so little effort. This is a great solution if you don't have access to a conventional oven. Try different variations. Use vanilla cake instead of chocolate and top with cherries or strawberries. Experiment!

Ingredients For magic microwave chocolate cake

  • 1/2 c
    angelfood cake mix
  • 1/2 c
    chocolate cake mix
  • 1/4 c
    water
  • 1/4 c
    chopped nuts
  • sweetened condensed milk

How To Make magic microwave chocolate cake

    In a medium microwave safe glass bowl, combine cake mixes and water with a whisk or fork until well.combined.

    Add chopped nuts and combine evenly.

    Cook in microwave on high for approximately 2 minutes. Time will vary depending on your microwave. WATCH CAREFULLY TO AVOID BURNING. Turn off microwave as soon as center looks firm. Check with your finger or prick with a toothpick. If center is still gooey, cook a few seconds at a time until just firm. It is easy to overcook. Cake will continue to cook a few seconds after you turn off the microwave. Let sit for 5 minutes.

    Remove bowl from microwave and run a knife around the outer edge of the cake to loosen.

    Drizzle with a little sweetened condensed milk, top with a few more nuts and serve.
