Ingredients For islay loaf

  • 1 c
    raisins
  • 3/4 c
    light brown sugar
  • 1 1/4 c
    water, cold
  • 1 Tbsp
    light corn syrup
  • 1 Tbsp
    butter or margarine
  • 2 1/2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 2 tsp
    apple pie spice
  • 1/2 c
    chopped walnuts

How To Make islay loaf

  • 1
    Warm the raisins, sugar, water, syrup, and butter in a saucepan until the fat has melted. Allow to cool slightly.

    Fold in the flour, soda, spice and walnuts.

    Spoon into a greased and lined 8-inch cake pan and bake in a preheated 350-degree oven for 1 hour or until a toothpick inserted near the center comes out clean.

    Turn out onto a wire rack, remove the paper and let cool before serving. Serve with a dollop of whipped cream.
