My husband's, Mark, favorite birthday cake for years was Carrot Cake. This is his mom's recipe. As far as carrot cakes go, this is a pretty easy recipe to make and follow. The cake is always moist and delicious. I always frost it with lots of cream cheese frosting.

How to Make Grandma Murray's Carrot Cake

Step-by-Step

  1. In a large mixing bowl, mix all ingredients together until well combined. Spoon into 2 greased 8-inch round cake pans or one greased 13x9x2-inch cake pan or 2 greased loaf pans.
  2. Bake in a 375 degree oven for 1 hour, 10 minutes (if using round pans or cake pan, time will be less so check with a cake tester or tooth pick after 25 to 30 minutes). Cake is done when tester comes out clean.
  3. Cool cake/loafs on wire rack for 10 minutes. Release cake/loaf from pan and cool completely. When cake is cool, frost with your favorite Cream Cheese frosting.
