My husband's, Mark, favorite birthday cake for years was Carrot Cake. This is his mom's recipe. As far as carrot cakes go, this is a pretty easy recipe to make and follow. The cake is always moist and delicious. I always frost it with lots of cream cheese frosting.

  • 3 lg
    eggs
  • 3 c
    sugar
  • 1 c
    canola oil
  • 3 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 3 tsp
    ground cinnamon
  • 2 c
    shredded carrots
  • 1 c
    chopped walnuts (vey necessary)
  • 8 oz
    can undrained crushed pineapple
  • 2 tsp
    vanilla

How To Make grandma murray's carrot cake

    In a large mixing bowl, mix all ingredients together until well combined. Spoon into 2 greased 8-inch round cake pans or one greased 13x9x2-inch cake pan or 2 greased loaf pans.

    Bake in a 375 degree oven for 1 hour, 10 minutes (if using round pans or cake pan, time will be less so check with a cake tester or tooth pick after 25 to 30 minutes). Cake is done when tester comes out clean.

    Cool cake/loafs on wire rack for 10 minutes. Release cake/loaf from pan and cool completely. When cake is cool, frost with your favorite Cream Cheese frosting.
