gayle's amazing lemon/lime birthday cake

I made this special birthday cake for my neighbor Gayle today, March 07. It is her special day, and I wanted the cake to be just as special as she is. I took a plain Lemon boxed cake mix, and kicked it up the TASTE BUD meter to make an impressive cake in taste & presentation. We have been friends & neighbors for more than 20 years. We both love to cook, & she is like a sister to me. She had no idea I was doing this for her special day, & after tasting it, she called to thank me & tell me her thoughts, & her husband came back for a second slice while she was chatting with me. THEY LOVED IT.

Ingredients For gayle's amazing lemon/lime birthday cake

  • 1 box
    duncan hines lemon supreme cake mix
  • 1/3 c
    vegetable or canola oil
  • 3 lg
    eggs, room temperature
  • 1/2 c
    lemon sorbet liqueur or lemoncello
  • 1/2 c
    half & half
  • 1/3 c
    lime juice
  • 1 Tbsp
    pure lemon extract
  • 1 box
    lime jello (small box)
  • 5-6
    drops green food color ( or to reach desired shade needed)
  • 1 can
    cherry pie filling (21 ounce can)
  • BIRTHDAY CREAM CHEESE FROSTING
  • 1 stick
    butter, room temperature
  • 1 box
    powdered sugar, sifted (1 pound)
  • 1 sm
    box lemon or vanilla instant pudding
  • 3-4 Tbsp
    half & half or enough to reach spreading consistency
  • 2 tsp
    lemon extract
  • 1 1/2 c
    sweetened shredded coconut
  • assorted green candies in keeping with the lime theme
  • may also use kiwi fruit slices and cherries if desired

    IT IS A GOOD FEELING WHEN YOU CAN SHARE YOUR LOVE OF COOKING WITH SOMEONE YOU LOVE, & TODAY I DID JUST THAT for my neighbor Gayle for her special Birthday, she especially appreciated all the extra ingredients I added to the cake, as well as the presentation. That made me happy & her husband too. This is a 2 piece cake pan made to look like 3 layers. I used the special insert that came with it so I could add the cherry pie filling in the center. It is called a 3 tier BAKE & FILL 2 PIECE CAKE PAN.

    Add the cake mix to a large bowl, then add the eggs, pudding mix, & oil.

    Now add the Lemon Sorbet and Lemon extract.

    Then pour in the half & half.

    Beat about 3 minutes till batter is completely blended.

    Now remove about 2 cups of the cake batter to a smaller bowl, then add the box of Lime Jello and green food color by drops & stir until the desired shade of green is reached.

    Prep baking pan with non stick cooking spray or bakers joy. Then add about half of the yellow cake batter to cake pan.

    Now add about half of the green cake batter, then top with the remaining yellow cake batter, and finish by adding the last of the green batter on top.

    Place in preheated 350 degrees F. oven for 40 to 45 minutes or until toothpick inserted into center of cake comes out clean.

    Remove from oven and cool for 10 minutes, then invert onto rack or cake platter to cool completely.

    Prepare the frosting by adding all of the ingredients to a medium size bowl, then beat till creamy and smooth. Frost cake on all sides, then sprinkle with shredded coconut, may need to press down slightly with fingers to make it stick to cake. Now decorate with assorted candies. Now carefully spoon cherry pie filling into center of cake. Then chill until ready to serve. Can also garnish cake with sliced kiwi fruit and cherry halves if desired.
