cinnamon roll breakfast cake - no sugar added!

My parents are diabetic and my Dad has alzheimers. He craves sweets and will eat sugar from the sugar bowl if he can't find anything else. I'm working on adapting some of my recipes for him. Made this cake yesterday. Dad has trouble eating nuts so I only put them on half for my Mom. She says it is wonderful! It's not low calorie or fat free, just no added sugar. You don't taste the applesauce, it's only a vehicle for making the cinnamon swirl and also makes it nice and moist. The cake can also be made with chocolate mixes and sauce, use cocoa and applesauce for your swirl.

Ingredients For cinnamon roll breakfast cake - no sugar added!

  • 1 box
    pillsbury sugar free yellow cake mix
  • 1 box
    sugar free instant vanilla pudding mix
  • 3/4 c
    oil
  • 3/4 c
    water
  • 4
    eggs
  • 1/2 - 1 c
    chopped pecans or walnuts
  • 1 1/2 c
    unsweetened applesauce
  • 2-3 tsp
    cinnamon
  • sugar free caramel topping or sauce

How To Make cinnamon roll breakfast cake - no sugar added!

    Preheat oven to 350 degrees or 325 for dark coated pans. Prepare bundt pan with nonstick spray and/or flour. Sprinkle chopped nuts in bottom of pan, more or less to taste.

    Use electric mixer to beat cake mix, pudding mix, oil, water and eggs until smooth and thick. Put 1/3 batter over nuts. Spoon half the applesauce mixture over the batter in a circle down the center, trying to avoid the sides of the pan as much as you can. Put the next 1/3 batter over and repeat with the applesauce, finishing with the last 1/3 of the batter. Use a butter knife to swirl the applesauce into the cake batter, avoid scraping the sides or bottom.

    Bake for 55-60 minutes. If the top starts getting too dark, slip a piece of foil over the top until cake is done. Let cake sit for 5 minutes, then run a knife around to loosen and flip onto serving plate. Drizzle with caramel sauce.
