Here's another good recipe to use those fresh blueberries with. Normally up-side down cake is made using pineapples, but try blueberries for a fresh taste you won't soon forget.

Ingredients For blueberry upside-down cake

  • 2 Tbsp
    light corn syrup
  • 1/4 c
    brown sugar
  • 1 Tbsp
    lemon juice
  • 1 c
    fresh blueberries
  • 1 c
    sugar
  • 2/3 c
    milk
  • 1
    egg
  • 1/3 c
    light corn syrup
  • 1 tsp
    vanilla
  • 1 c
    all-purpose flour
  • 1/4 c
    cornstarch
  • 1 1/2 tsp
    baking powder

How To Make blueberry upside-down cake

    Grease an 8" baking pan. Mix 2 tablespoons corn syrup, brown sugar, and lemon juice in the pan. Sprinkle blueberries on top of mixture.

    Mix sugar and milk in a bowl. Add egg, remaining corn syrup, and vanilla. Stir in flour, cornstarch, and baking powder, mix until smooth.

    Spoon over berries. Bake at 350 degrees for 35 minutes or until toothpick inserted near center comes out clean. Do not over bake. Serve pieces up-side down on dessert plates. Top with blueberry sauce and whipped topping or ice cream.
