These lemon balm tincture cookies are deliciously refreshing! You can substitute lemon flavoring for the tincture but if you grow your own lemon balm and make your own tincture like I do, the tincture is wonderful.

Ingredients For sugar cookies with lemon balm tincture

  • 1 stick
    unsalted butter, softened
  • 3/4 c
    sugar
  • 1
    egg
  • 1 tsp
    lemon balm tincture
  • 1 1/2 c
    flour
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1
    lemon, zest and juice
  • 1 c
    powdered sugar

How To Make sugar cookies with lemon balm tincture

    Preheat oven to 350 degrees. Using the paddle in a stand mixer, cream butter and sugar. Add egg and mix well. Add lemon balm tincture and zest of one lemon (1-2 tablespoons). Mix until combined.

    Sift flour, salt, and baking soda. Add dry ingredients to wet ingredients 1/2 a cup at a time, mixing until incorporated before adding more dry ingredients.

    Drop spoonfuls of cookie dough (I use a tablespoon cookie scoop) onto a parchment lined cookie sheet. Bake for 12 minutes or until the edges just begin to brown slightly.

    Remove cookies from oven, cool on cookie sheet 3-5 minutes then transfer to a wire rack to cool completely.

    Mix together 1 cup of powdered sugar and about 2 tablespoons of fresh lemon juice. Transfer the icing to a cookie icing bottle and decorate cookies using a zigzag lined pattern as seen in the picture.
