I've completely flunked at being an "Empty Nester". I still cook as if the entire dorm is coming for the weekend. This recipe is perfect for one or two. It makes 15-18 medium-sized cookies. Just enough to satisfy that peanut butter craving. These turn out perfectly every time- soft, thick and just a little chewy. =)

Ingredients For small batch peanut butter cookies

  • 1/2 c. peanut butter
  • 4 tb. butter
  • 1/4 c. brown sugar
  • 1/4 c. white sugar
  • 1/2 tsp. salt
  • 1/2 tsp.baking soda
  • 1/2 tsp. baking powder
  • 3/4 tsp. vanilla
  • 1 egg yolk (just the yolk)
  • 3/4 c. flour

How To Make small batch peanut butter cookies

    Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

    Cream peanut butter and butter together with hand mixer. Add brown sugar and white sugar. Mix for two minutes at medium speed.

    Add salt, baking soda, baking powder, vanilla and egg yolk. Mix until blended.

    Add flour, 1/4 cup at a time, until uniform in color. Roll into 1 1/2" balls and place on prepared cookie sheet. (You can roll in sugar, if you wish. I just sprinkle them when they come out of the oven.) Flatten very slightly with the bottom of a glass dipped in sugar. You want them a little thicker.

    Bake at 350 degrees for 8-10 minutes or until golden. Watch closely as all ovens are different. When done, sprinkle with sugar, if desired, while hot. Cool slightly before removing from baking sheet.
