A yummy treat combining chocolate and pumpkin in a wonderful balance of flavors. Note: Pumpkin spice can be substituted with 1/4 tsp ground cloves and 1/4 tsp ground nutmeg.

Ingredients For pumpkin oatmeal chocolate chip cookies

  • STEP ONE
  • 2 c
    all purpose flour
  • 2 1/3 c
    old fashioned oats
  • 1 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 tsp
    cinnamon
  • 1/2 tsp
    pumpkin pie spices
  • STEP TWO
  • 1 c
    butter, unsalted - softened
  • 3/4 c
    dark brown sugar
  • 3/4 c
    granulated sugar
  • 2 Tbsp
    honey or maple syrup
  • STEP THREE
  • 1 c
    pumpkin puree
  • 1 lg
    egg
  • 1 1/2 tsp
    vanilla extract
  • STEP FOUR
  • 2 c
    chocolate chips

How To Make pumpkin oatmeal chocolate chip cookies

    Preheat oven to 350 degrees F.

    Grease baking sheets or line with silpat or parchment paper.

    Combine ingredients from Step One in a bowl.

    Cream ingredients from Step Two in a large mixer bowl until light and fluffy (about 3 minutes).

    Add Step Three ingredients and mix well.

    Add combined ingredients from Step One and mix until just combined. Do not over mix.

    Stir in ingredients from Step Four.

    Chill dough for 30 minutes.

    Form dough into golf ball sized scoops, then bake for 14-16 minutes, depending on size of cookie. Use Pampered Chef's Medium or Large scoop for consistency.
