I love Russian Tea Cake cookies, but wanted them without the expensive pecans...so I stuffed sweet prunes on top, covered them with a minnie cookie hat, and they're delicious. Important hint, the colder the dough, the better they hold their shape when baking, otherwise they resemble flying saucers, instead of hats. If the ingredients are chilled & you work quickly, you won't need to chill the dough. After baking, roll them in the powdered sugar while they're still warm. This gives them a wonderful almost frosting covering.....yummy!

How to Make Prune Hat Cookies

Step-by-Step

  1. Mix together thoroughly:

    1 cup softened butter
    1/2 cup powdered sugar
    1 tsp. vanilla

    Sift together & stir in:

    2 1/4 cups sifted flour
    1/4 tsp. salt

    Chill dough, if needed. Roll into balls the size of small walnuts. Place on ungreased baking sheet. Push a sweet prune in the center of each cookie. Cover each by making a small shooter marble sized ball & flatten with the palm of your hand. Place on top of each cookie. Press cookie with the heel of your hand to secure the hat ;) Bake at 350 degrees for 10 to 12 minutes until set, but not brown. As soon as you can handle them, roll in powdered sugar, then finish cooling.
