This is an old recipe that I got 40 years ago from the mother of a childhood friend. Not sure where the idea of adding potato chips came from but these are really good. Made a batch of these cookies today! Made 6 dozen. I love the expression on peoples faces when I tell them the recipe has 2 cups of crushed tater chips. Can't really taste the chips...more like butterscotch. Enjoy!

Ingredients For potato chip cookies

  • 1 c
    butter, softened
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 2
    eggs
  • 2 1/4 c
    flour
  • 1 tsp
    baking soda
  • 2 c
    crushed potato chips, reg flavor
  • 6 oz
    butterscotch chips
  • 1 c
    chopped nuts (optional)

How To Make potato chip cookies

    Preheat oven to 325. Cream first 3 items until well blended and then add eggs. Mix well.

    Add: flour, baking soda, crushed reg. potato chips 6 oz butterscotch chips and 1 cup chopped nuts, if desired. Mix until well combined.

    Drop by spoonfuls onto baking sheet and bake until lightly browned. Time depends on your oven and if you like em soft or crunchy 10 to 15 minutes.
