peanut butter & honey cookies

We decided to try and get healthier, so I went shopping and bought Kraft All Natural Peanut Butter & Honey Peanut Butter. Well I tried to put it on a sandwich and WOW it was very pea-nutty lol. Way to strong for me on a sandwich (kinda like a handful of peanuts on bread) My son says to me "mum, it would make some pretty sweet peanut butter cookies" so that is exactly what I decided to do!

Ingredients For peanut butter & honey cookies

  • 1 c
    kraft all natural peanut butter & honey peanut butter
  • 1/2 c
    butter softened
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar, firmly packed
  • 1 lg
    egg
  • 1 Tbsp
    vanilla extract
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt

How To Make peanut butter & honey cookies

    Preheat oven to 350 F In a stand mixer, cream together the peanut butter, butter, sugar and brown sugar. Beat together until creamy.

    Add the egg and the vanilla extract and continue to mix until well combined. In a separate bowl, whisk together flour, baking soda, and salt. Slowly add flour mixture to the butter mixture and mix until well combined.

    Using a cookie dough scoop make 1 inch balls. Roll into white granulated sugar. Using a fork, press down each ball of dough to slightly flatten creating a criss-cross. Bake for 8-9 minutes depending on your oven. Don't over-bake. Make sure the bottom of the cookie is nicely browned. Let cool for a few minutes then transfer onto cooling rack.

    After I made these AMAZING soft and pea-nutty cookies with just a hint of honey. I was talking to my step son as he was eating some not even cooled cookies ( they don't even last 1 day in our house). We were joking around talking about adding banana's on top so it would taste like my favourite PB Honey and Banana sandwiches. I had enough mix to make one more dozen cookies. I took a frozen banana out of the freezer ( we save for smoothies when they get to dark to eat fresh) put a slice of banana on each cookie and then baked for 9 minutes (I cooked 1 extra minute in my oven because of the banana)
