Passionate Cookie Bars
These are a V-Day treat I enjoy making to take to Valentine's parties.
- 2 1/2 c
- all purpose flour
- 1 c
- granulated white sugar
- 3/4 c
- pecans or walnuts
- 1 c
- cold butter
- 1 1/2 c
- passion fruit jelly
- 1/2 to 3/4 c
- flaked coconut
How to Make Passionate Cookie Bars
- 1Preheat oven to 350 degrees and grease a 9x13x2 baking pan.
- 2In a large mixing bowl, stir together flour, sugar, nuts and egg in a large bowl. Cut in the cold butter with a pastry cutter or fork until it is a coarse crumbly mixture. Measure out about 1 1/2 cups and set aside.
- 3Firmly press the remaining crumbs into the bottom of greased pan.
Stir jelly to soften and make it easier to spread, if it is too thick add a teaspoon or two of water.
Spread over crumb mixture and then crumble the reserved crumb mixture over the top.
- 4Bake about 40-45 minutes, will be light brown. Top with coconut flakes and cook completely in pan before cutting into bars.
