I finally found the cinnamon chips at Winco here in California that all the JAP gals were talking about. I wanted to figure out a good recipe to use them in. I had a lot of apples and thought an apple oatmeal cookie would be a good way to use them. They turned out awesome, and everyone loved them in their Christmas goodie boxes. The local JAP gals who came to the cookie exchange thought they were yumolicious. Enjoy!

Blue Ribbon Recipe

Oh my goodness ... this recipe is all the flavors of fall in a cookie. The spices and the cinnamon chips give this cookie a burst of cinnamon flavor. Walnuts add crunch, and you taste the apple bits. This recipe takes oatmeal cookies to a brand new level of deliciousness. These would be great for a bake sale, cookie exchange or just a yummy treat for the family. Ingredients

  • 1 c
    butter, softened
  • 1 1/4 c
    dark brown sugar, packed
  • 3 large
    eggs
  • 2 tsp
    vanilla extract
  • 2 c
    flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 3/4 tsp
    nutmeg
  • 1/2 tsp
    cloves or allspice
  • 2 1/4 c
    quick cooking oatmeal
  • 1 1/2 large
    granny smith apple, peeled and diced small (eat other 1/2 or use 2 medium)
  • 1 bag(s)
    cinnamon chips, 10 oz.
  • 1 1/2 c
    chopped walnuts
  • ·
    glaze or white chocolate for garnish

How to Make Oatmeal, Apple, Cinnamon Chip Cookies

Step-by-Step

  1. Heat oven to 350 degrees. Prepare cookie sheets with parchment paper.
  2. In mixer bowl cream butter and brown sugar; about 2 minutes.
  3. Beat in egg and vanilla.
  4. Sift flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  5. Mix flour mixture into creamed mixture just until blended.
  6. Add oatmeal, apples, cinnamon chips and walnuts till blended.
  7. Scoop dough onto cookie sheets 2 inches apart. Bake for 10-12 minutes until edges are light brown.
  8. Let cool a few minutes and remove to cooling rack to cool completely.
  9. Drizzle with melted white chocolate or with a powdered sugar glaze. I used melted white chocolate and it was delicious... Enjoy!
