no guilt low carb peanut butter cookies

My husband named these cookies not only for their taste, but because you can eat them without guilt if you are counting carbs, or watching your waste line, & they taste amazing. These are by far the best dessert cookie I have created since going low carb just over a month & a half ago. There is no guilt because they are 68 calories per cookie, only 1 gram of sugar, 2 grams of fiber, & only 4 carbs but the NET CARB is only 2 because of the fiber. ASIDE FROM THE NUTRITION THEY'RE JUST' DELICIOUS. The Mexican Vanilla was a gift from my friend here @ Just a Pinch Phyllis Lively. I love it.

Ingredients For no guilt low carb peanut butter cookies

  • 2/3 c
    butter, softened (11 tbs)
  • 1 c
    viva ground flax seed
  • 1 1/2 c
    viva super fine almond flour
  • 2 lg
    eggs, room temperature
  • 1 Tbsp
    baking powder
  • 1 c
    fishers lightly salted peanuts, chopped
  • 1 c
    creamy peanut butter
  • 1 Tbsp
    mexican vanilla or regular vanilla extract
  • 1/3 c
    evaporated milk (5 tbs)
  • 1 1/3 c
    splenda zero calorie sweetener (32 packets)

How To Make no guilt low carb peanut butter cookies

    PREHEAT OVEN TO 350 DEGREES F. Combine ground flax seed with almond flour, add baking powder, stir to mix together then set aside till needed.

    These two are the star of the show for these amazing cookies.

    Add peanut Butter, with splenda, eggs, and butter. Beat until mixture is creamy and smooth.

    Add in the Mexican Vanilla, & beat to blend, it is awesome, and was a gift from Phyllis Lively here at Just A Pinch. I love it. You can use regular vanilla if you don't have the Mexican Variety, but you don't know what you are missing.

    Add in the chopped peanuts, and beat until blended into batter.

    Now add in half of the flour mixture blend and beat till blended then add in the remaining flour mixture with the milk & & beat till batter is smooth.

    This is what the ground flax seed looks like.

    Drop by teaspoon onto a greased cookie sheet about 1 1/2 inches apart. I used nonstick cooking spray. Bake for 10 minutes then remove from oven.
