I use to giveaway these cookies for family and friends, but now I started to sell some and my clients love them! They´re crunchy, with no greasy feel and with the exact sweetness.

Ingredients For my real delicious butterscotch cookies

  • 225 g
    unsalted butter (room temp)
  • 100 g
    sugar
  • 320 g
    all purpose flour, sifted
  • 2 g
    salt
  • 1/2 tsp
    vanilla
  • as needed
    sugar for decoration

How To Make my real delicious butterscotch cookies

    Preheat oven 190ºC (370ºF) Chop the butter in small pieces, add sugar, salt and vanilla, and mix it with hands (no electric mixer or spatula).

    When it´s incorporated, add flour and keep mixing with hands until the dough doesn´t stick to the sides of the bowl.

    If you feel it very soft, place it into the fridge for 10 or 15 minutes before rolling out the dough.

    Roll out the dough about 3-4mm height, and cut it with cookie cutters. Place the cookies in a tray leaving some space between, and you can add some sugar or dark sugar for more crunchiness. You don´t need to use parchment paper or grease your tray because of the butter in the dough.
  • As you can see, I like the cookies a bit darker, so you can leave them for 20 minutes or more in the oven. They´ll do great!

    Bake for about 17-19 minutes each tray, or until golden. Cool for 30 minutes before eating. These are great for coffee time.
