Ingredients

  • 1 c
    butter, softened
  • 1/2 c
    powdered sugar
  • 1 1/2 tsp
    vanilla extract
  • 2 c
    all-purpose flour
  • 1/2 tsp
    salt
  • 1 c
    old-fashioned rolled oats (quaker oatmeal, not instant)

How to Make Mexican Wedding Cookies

Step-by-Step

  1. PRE-HEAT OVEN TO 350 degrees
  2. In a large bowl beat butter until creamy.
  3. Gradually beat in powdered sugar, then salt, vanilla, flour, and salt.
  4. When blended and smooth stir in oats. shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. You can also flatten by pressing with fingers.
  5. Bake 18-22 minutes or until golden brown.
  6. While still warm roll in powdered sugar.
  7. Cool on wire rack. Makes 2 1/2 to 3 dozen cookies.
