I came up with these using whatever I had in the pantry at the time. I was having a bad day and baking is a huge stress reliever for me. My family came up with the name and they ask me to make these again and again and again!

Ingredients For luxury leftover cookies

  • 1/2 c
    packed light brown sugar
  • 1/4 c
    sugar
  • 3/4 c
    applesauce, unsweetened
  • 1/4 c
    water
  • 1/4 c
    egg substitute
  • 1 tsp
    pure vanilla extract
  • 2 c
    old fashioned oats
  • 1 c
    quick cooking oats
  • 1/2 c
    all purpose flour
  • 1/2 c
    whole wheat flour
  • 1/2 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground nutmeg
  • 1 c
    semi-sweet chocolate chips
  • 1/2 c
    raisins
  • 1/2 c
    dates, chopped
  • 1/2 c
    dried cherries, chopped
  • 1/2 c
    dried blueberries

How To Make luxury leftover cookies

    Preheat oven to 350 degrees. Lightly spray baking sheets with olive oil spray.

    Beat sugars, applesauce, water, egg substitute, and vanilla until creamy. In a separate bowl, combine oats, flours, baking soda, salt and spices. Add to sugar mixture gradually, mixing well after each addition. Stir in chocolate chips and dried fruits.

    Drop dough by rounded teaspoons (I used kitchen teaspoons rather than measuring teaspoons) onto prepared cookie sheet. Bake for 10 minutes. Let stand on baking sheet for one minute before removing to wire rack to cool completely.
