I recently was told by the doctor that I need to get my cholesterol down by 30 points in 90 days, or I have to start taking statin drugs. Cookies have egg yolks and butter and won't help me get to my goal. I made this recipe to accommodate my sweet tooth and maybe even help lower my cholesterol at the same time. Oats are notorious for lowering cholesterol, and the Omega-3 in some cooking oils is beneficial, too. I don't think anyone will know that these are a healthier choice unless you tell them. Lower cholesterol, here I come.

These oatmeal cookies are sweet, chewy, and kissed with just the right touch of spice. By eliminating egg yolks and substituting half the oil with applesauce these cookies are lightened up without sacrificing flavor or texture. They're so tender you'd swear they have butter.
