Here is a blast from the past: Vintage 1950's! Jungle Bars! This is an oldy but goody recipe that is sure to please your family. Take Jungle Bars to your next potluck. They disappear fast. For a great dessert, serve these bars warm from the oven with a big scoop of vanilla ice cream on top! Enjoy!

Ingredients For bonnie’s jungle bars

  • 2 3/4 cups organic all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cardamom
  • 2 1/4 cup packed brown sugar
  • 3 eggs slightly beaten
  • 2/3 cup unsalted butter, melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1 cup walnuts chopped
  • 1 cup semi sweet chocolate chips

    COOKS NOTE: Assemble all the ingredients before you begin. You will need one large, one medium, and one small mixing bowl. I use a 10 x 15 by 1 inch, well-greased Air Baking Pan. Preheat oven to 325 degrees. Bake 35 minutes. Cool on Rack. Cut into 24 squares.

    DRY INGREDIENTS: In the large mixing bowl, add flour, baking powder, salt, and cardamom. Mix well with a whisk.
  • The Wet Ingredients

    WET INGREDIENTS: In the medium mixing bowl, add the 2/3 cup of melted butter, 2 1/4 cups packed brown sugar, 3 beaten eggs, and 1 teaspoon vanilla. Mix well with a large wooden spoon.

    NUTS AND CHOCOLATE: In the small mixing bowl, add one cup of chopped walnuts, and one cup of chocolate chips.

    COMBINE the DRY INGREDIENTS in the large bowl with the WET INGREDIENTS in the medium bowl.

    Now add the chocolate chips and the nuts. Stir with a spoon to combine.

  • Dump the stiff dough onto the greased baking pan.

  • Pat and press the stiff dough evenly over the surface of the pan.

    Grease your hands with butter. It will make handling the dough much easier. Press and pat the dough until it covers the surface of the pan evenly in all four corners.
  • Bake at 325 degrees for 35 minutes.  Cut into 24 bars.

    Bake in the pre-heated oven for 35 minutes at 325 degrees. Cut into 24 bars before they get totally cool.
  • For a great dessert, serve warm with a big scoop of vanilla ice cream ladled on top!
