Healthy in Disguise Cherry-Oatmeal Squares

Everyone knows a couple where one is a super healthy eater and the other one a raging sweet tooth-this recipe is your way to satisfy both! It is sweet enough to appear full of sugar but SO healthy! If you really want to go for the gold, use a no calorie brown sugar sweetener and a whole wheat flour!

  • 2/3 c
  • 3/4 tsp
    baking powder
  • 1
  • 1
    egg white
  • 1 c
    light brown sugar
  • 4 Tbsp
    butter, melted
  • 1 tsp
    pure vanilla extract
  • 1/2 c
    old fashioned quaker oats
  • 1 jar(s)
    (small jar) marishino cherries, no stems
  • 1/4 c
    chopped walnuts
  • ·
    powdered sugar

How to Make Healthy in Disguise Cherry-Oatmeal Squares


  1. Preheat oven to 350. Spray 8X8 baking pan with cooking spray. Cover pan with foil and also spray foil (easy to get squares out)
  2. sift together flour and baking powder in a small bowl.
  3. in a large bowl, beat egg, egg white, sugar, butter, and vanilla until smooth.
  4. beat in flour mixture, oats, and then the walnuts until well blended.
  5. Drain the maraschino cherries, saving the juice. Cut each cherry in half and fold into batter.
  6. evenly spread batter into pan. Bake for 20 minutes or so, or until toothpick comes out clean.
  7. Let squares cool in pan on a wire rack. As they cook, make the icing but combining the leftover cherry juice and powdered sugar (the combination of the two will vary depending on how sweet the glaze you want. It should turn out to be a light pink color-approx 1-1/2 cup powdered sugar with the juice)
  8. Once completely cooled, lightly drizzle glaze over squares, cut, and enjoy! If you really want to get fancy, in another small bowl combine 1/2 tablespoon butter, 1/2 tablespoon brown sugar, and 1/4 cup of chopped walnuts. you might need to add a little more sugar and butter but it should turn out like a sticky crumble that you can crumble on top of squares before adding the glaze.
