I made these cookies for a friend's children, as they aren't allowed to eat candy or anything too unhealthy. The kids loved them and my friend approved! You can use canned cream cheese or sugar-free frosting, or make a homemade cream cheese frosting with reduced-fat cream cheese.

  • 1 box
    boxed spice cake mix (18.25 oz)
  • 1 can(s)
    pumpkin puree (not pie filling) (15 oz)
  • 2 large
    egg whites
  • 1 c
    quick cooking oatmeal
  • 1 c
    frosting of your choice
  • ·
    festive sprinkles

How to Make Healthier Than Candy Pumpkin Cookies

Step-by-Step

  1. Preheat the oven to 350 degrees F. Lightly spray a large cookie sheet with cooking spray or line with parchment paper.
  2. In a large bowl stir together the cake mix, pumpkin, egg whites, and oatmeal until combined.
  3. Drop heaping tablespoonfuls of batter onto the prepared pan.
  4. Bake cookies for 8-10 minutes or until slightly firm yet cake like when gently pressed. Cool on wire racks.
  5. Once cookies are cooled completely, frost cookies.
  6. Decorate with sprinkles. Makes about 24 cookies.
