I was in the baked goods, but not sweets mode. These were a good compromise. I played with a ginger-spice cookie recipe to create these.

Ingredients For ginger-cranberry bites

  • 2 1/2 c
    flour
  • 1 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    ground ginger
  • 1 Tbsp
    ground cinnamon
  • 1/4 tsp
    nutmeg
  • 1/2 tsp
    salt
  • 1/2 c
    oil
  • 1/2 c
    applesauce
  • 1/2 c
    molasses
  • 3/4 c
    sugar
  • 1 c
    dried cranberries

How To Make ginger-cranberry bites

    Preheat oven to 325 degrees. In medium size mixing bowl mix flour, baking powder, baking soda, ginger, cinnamon, nutmeg, and salt.

    In a separate large mixing bowl mix oil, applesauce, and molasses. Mix in sugar.

    Slowly add flour mixture to wet mixture, about 1/4 cup at a time.

    After all flour mixture is added fold in the cranberries.

    Roll dough into balls (should yield about 36 balls).

    Lightly grease cookie sheet and place balls on cookie sheet. Bake for 18-20 minutes.

    Remove from oven, use spatula to remove balls and place on a wire rack to cool. After cool, store in an airtight container.
