I posted this recipe for your reading enjoyment. This is an old Depression Era recipe for Quackers. We have no idea why it is called that. They made cookies a lot different back then than we do today. So, I wanted to try the recipe this morning and see what Quackers looked like as I have never sampled one. I took the picture, too. The cookies are a lot sweeter and a lot heavier, yet tasty, and the house smells like heaven when they are baking! Enjoy!

    cups of sifted flour
  • 2
    cups brown sugar
  • 1
    cup lard (i used crisco)
  • 2
    eggs, beaten
  • 3
    cups oats
  • 1 1/2
    teaspoons baking soda
  • 1
    teaspoon salt
  • 2
    teaspoons vanilla
  • brown sugar to roll cookies in

    Pre-heat the oven to 370 degrees. Grease a cookie sheet.

    In a large mixing bowl, cream the lard and brown sugar together. Blend in the beaten eggs and vanilla. Add dry ingredients. Mix well, then add the oats, mix again.

    How to shape the cookies: The dough will be stiff, pinch off a piece and make a small ball about 1 inch around. Roll it in brown sugar, flatten somewhat and place on the cookie sheet.

    Bake the Quackers in a pre-heated oven 370 degrees for 12 to 15 minutes until golden brown. Don't overcook. Enjoy!
