This is a favorite cookie from Malta. It reminds me of my Mom's favorite date stuffed cookies my Grandma used to make her.

Ingredients

  • FOR THE PASTRY

  • 3 2/3 c
    flour
  • 1/3 c
    sugar
  • 1
    egg
  • 1/2 c
    butter
  • 1 pinch
    baking powder
  • FOR THE FILLING

  • 14 oz
    dates
  • ·
    orange zest
  • ·
    lemon zest
  • 2 Tbsp
    brandy

How to Make Date Diamonds

Step-by-Step

  1. Mix butter, flour and baking powder together and work until smooth.
  2. Mix sugar and egg together, add to the flour and work to a smooth dough.
  3. Cover bowl and let the dough rest for 2 hours.
  4. Put 2 T water in a pan with the dates. Heat for 3 or 4 minutes.
  5. Add the brandy and the zests to the dates and mash together with a fork.
  6. Open the pastry into long strips about 4 in wide. Brush the edges with water.
  7. Put a little filling down the center.
  8. Fold pastry. Press both edges to keep the filling in.
  9. Using a ravioli cutter, cut into large diamond shaped slices about 4 in long.
  10. Cook in plenty of hot oil until golden brown.
