egg whites
1/4 tsp
cream of tartar
1 dash(es)
1/2 c
2 tsp
ground cinnamon
1 tsp
vanilla extract
1/2 tsp
almond extract

How to Make Cinnamon Clouds Cookies


  • 1In medium bowl, combine egg whites with cream of tartar and salt; beat with electric mixer until soft peaks form. Gradually beat in sugar until stiff peaks form.

    Fold in cinnamon, vanilla and almond extract. Drop by tablespoonfuls onto greased baking sheet.
  • 2Bake at 300 F. for 30 minutes. Turn off heat and leave cookies in oven, with door closed, until cooled. Store in airtight container to retain crispness for up to 1 week.
  • 3Variation:

    Stir in 1 cup semi-sweet chocolate chips, chopped pecans or chopped walnuts if desired.
