Soft and chewy, with a good spicy molasses flavor. These cookies are a harbinger of the holidays. Yes, you can make them any time of the year, but to me, they scream Christmas!

Is it really Christmas until you've had a good molasses cookie? This is the perfect chewy one and we could not stop eating them. The spices are perfectly balanced. Inside the cookie is soft and chewy. Outside they are sugary and slightly crisp. Once baked the perfect crackle forms on top. A traditional cookie for Christmas, these need to be on your holiday cookie tray.

Ingredients For chewy molasses cookies

  • 1 c
    brown sugar, firmly packed
  • 3/4 c
    butter-flavored shortening
  • 1
    egg
  • 1/2 c
    molasses
  • 2 1/2 c
    all-purpose flour
  • 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 1/2 tsp
    ground cloves
  • 1/2 tsp
    ground allspice
  • 1 tsp
    ground cinnamon
  • 1 tsp
    ground ginger
  • granulated sugar, for rolling

How To Make chewy molasses cookies

  • Brown sugar, shortening, egg, and molasses mixed well.

    Preheat oven to 350 degrees F. Cream together the brown sugar and shortening. Stir in the egg and molasses and mix well.
  • Dry ingredients mixed together.

    In a separate bowl, mix together the flour, salt, baking soda, cloves, allspice, cinnamon, and ginger.
  • Adding dry ingredients to wet ingredients.

    Fold the dry ingredients into the wet ingredients a little at a time. Stir until combined.
  • Dough in a mixing bowl.

    Once all the ingredients are combined, you'll have a stiff dough.
  • Scooping out portions of dough.

    Roll dough into small balls (I use a small cookie scoop).
  • Rolling dough into sugar.

    Roll in white sugar.
  • Cookie dough on a baking sheet.

    Place on cookie sheets lined with parchment paper that's been lightly greased. Keep the cookies about 2 inches apart. Alternatively, you can use a Sil-Pat mat, if you have old cookie sheets.

    Bake 8 - 9 minutes.

    Leave on the cookie sheet 1 - 2 minutes until set.
  • Cookies moved to a wire rack to cool.

    Slide the parchment paper or move the cookies to a cooling rack to cool completely. Keep in an airtight container for about a week (if they last that long).
