I would like to dedicate this recipe to my special ladies group of "SCARLET FLOOZIES" we belong to the OFFICIAL RED HAT SOCIETY CLUB. This is my original recipe and a combination of a cookie and a bread recipe,that I have in my recipe box.. Then I added my little touches and came up with this sweet little red (hat)cherry cookie, on my second baking attempt. I believe it is perfected....and now a sweet little bit of heaven! My ladies enjoyed it! They even asked for the recipe!

Ingredients For "cherry delight squares"

  • 5
    egg whites.. ..( i use powdered egg whites)
  • 1/4 tsp
    salt
  • 1-3/4 c
    sugar
  • 2 c
    chopped pecans
  • 1 c
    candied cherries.......cut cherries in half
  • 10 Tbsp
    melted butter
  • 1-1/2 tsp
    vanilla
  • 1-3/4 c
    sifted... cake flour..... (see # 5 note below!)

How To Make "cherry delight squares"

    Pre-heat oven to 350F. Line a 9x13 baking pan with buttered wax paper or parchment paper. Beat egg whites until foamy. Gradually add sugar and beat until whites form stiff peaks. again.Add salt and beat.

    Combine pecans, cherries melted butter and vanilla...and fold into whites, slowly and alternately with the combined flour.

    Spread into the baking pan, and smooth the top with a wet spatula. Bake till dry...about 35 minutes. Cool in pan. Remove,the cookie block, and cut into strips. **Be sure the waxed papr is removed from bottom of cookie. Then into little squares.

    Arrange on a pretty serving plate... Enjoy with company. These freeze well... if there is any left!....LOL

    NOTE: Here is the recipe to make your own CAKE FLOUR, from regular white flour. In a bowl mix 6 cups flour and add 12 Tablespoons of corn starch. Mix well...then only use what your recipe calls for.
